Backup your site to your computer. HTTrack is a free (GPL, libre/free software) and easy-to-use offline browser utility. It allows you to download a World Wide website from the Internet to a local directory, building recursively all directories, getting html, images, and other files from the server to your computer. HTTrack Website 
Copy your site. You can copy your site to a new URL. This might be a good idea for a backup. Also you can use this if you want to change the URL of your site. (Maybe you just want to change the spelling). Steegle's How to Copy Site 
Create a second site for trying things out. You can have multiple sites. You can make your test sites private if you like.  
Create more Owners for your site. If you lose access to your site a second owner can invite you back in. Invite a trusted friend or co-worker or create a secondary email address, maybe from your ISP, and invite that address as owner. See the link for help. How do I invite someone as owner... 
Don't make page URLs too long When creating a new page don't accidently (or on purpose) paste the entire text of the page in the page title box. You will create a page that you cannot access.   
If you have someone else create your site... Make sure that the other person shares the site with you as an owner. If they will not do that find someone else! Make sure you always have co-ownership of your site. As soon as your site is finished remove the site creator as owner or reduce them to editor status.  
Use the help forum Help Forum Hint: Do a search for your question before posting...many of the same questions are asked (and answered) every day! Watch out for Ad blockers, Pop up blockers and Zoom Level Ad Blockers and Pop up blockers can prevent the use of parts of Google Sites. Setting your zoom level to anything other than 100% can also be a problem.  
Write down your Google account info and save it safely. So you used a cute Google account name, created a site and now a few months later you can't sign in because you can't remember the name you used and your computer crashed and you have to start from scratch.
